Beef Caldereta With Virginia Liver Spread – Pampasarap sa Lutuin

Cooking dishes that take time for me to cook is one of the things I do during weekends. Sometimes, I cook with my husband as our way of bonding with each other. Just last weekend, since my sister is here in Cebu for a vacation, we had a great time in the kitchen cooking Beef Caldereta with Virginia Liver Spread. Yes, you read it right, liver spread is not only used as a spread. The liver spread’s unique flavor can also be used as an ingredient that could turn typical Filipino dishes into something more. Trust me, it made our beef caldereta more flavourful. See the recipe below:

How to Cook Beef Caldereta With Virginia Liver Spread

Ingredients:

1 kl beef cubes
3 pieces garlic cloves chopped
1 piece onion chopped
1 pc. potatoes sliced
2 pcs. carrots sliced
1 pc. beef cubes
1 pc. red bell pepper sliced
1 pc. green bell pepper sliced
1 cup tomato sauce
1 can 100g Virginia liver spread
3 pcs. dried bay leaves
1 tbsp cooking oil
salt and pepper to taste

Instructions

  1. Heat the cooking oil in the cooking pan.
  2. Sauté the onion and garlic.
  3. Add the beef. Cook for 5 minutes, and add the tomato sauce. Cover.
  4. After around 15 minutes, add the beef cube and then water. Stir and cover.
  5. After another 15 minutes, add the Virginia liver spread.
  6. Add potato and carrots. Cook for 10 minutes.
  7. Add the green and red bell pepper. Stir and continue to cook for 5 minutes more.
  8. Add salt and pepper to taste.
  9. Server and enjoy!

There are different versions of Caldereta but I like this version more. Cooking it with tomato sauce alone sometimes leaves a bitter aftertaste.
